For when you're on the go and theres not much time to cook.....some recipes that fix up fast but taste like you cooked all day!
 

Country Style Casserole

2 cans condensed Cream of Chicken soup
3/4 Cup Mayonnaise
1/2 Cup Milk
3 Tablespoons Honey
2 Tablespoons Dijon Mustard
1 26 oz Package of Frozen shredded Hashbrown Potatoes
4 Cups cubed cooked Chicken or Ham
3 Cups Sliced Frozen Carrots (optional)

In a large bowl, combine the first five ingredients. Stir in hash
browns, chicken and carrots (if desired). Transfer to a greased 13 x 9 x 2 baking dish. Cover and bake at 350 for 45-50 mins. Uncover and bake an additional 15-20 mins longer or until bubbly.
 
 
Ground Beef N Biscuits
 
1 1/2 # ground beef
1/2 cup chopped celery
1/2 cup chopped onion
2 T flour
1 tsp salt
1/4 tsp dried oregano
1/8 tsp pepper
2 cans (8 oz each) tomato sauce
1 package (10 oz) frozen peas
1 tube (7 1/2 oz) refrigerated biscuits
1 cup shredded cheddar cheese
In a skillet over medium heat brown beef, celery and onion until meat is no longer pink and celery is tender.  Drain.  Stir in flour, salt, pepper, oregano until blended.  Add tomato sauce and peas, simmer for 5 minutes.  Transfer to a greased 13 x 9 baking dish.  Seperate biscuits; arrange over beef mixture.  Sprinkle with cheese.  Bake uncovered 350* for 20 minutes until biscuits are golden and cheese is melted.
Serves 6
 
 
Parmesan Chicken & Rice and Green Pea Side Dish

1 cup grated parmesan cheese
2 cups soft bread crumbs
1/3 cup melted margarine 
1/2 cup regular or country style Dijon Mustard
6 boneless skinless chicken breasts
Combine cheese, bread crumbs, and butter.  Coat chicken breasts with mustard then dip in crumb mixture.  Place breaded chicken in a 9 x 13 baking pan.  Bake 425* for 15 minutes.  Makes 6 servings
 
Rice and Green Pea Side Dish

1 cup uncooked long grain rice 
2 cups water
1 medium onion diced
2 cups frozen peas, defrosted
1 carrot peeled and shredded
1 tsp salt free herb seasoning (mrs. dash)
1 tsp chicken bouillion granules
salt and pepper to taste
Place all ingredients in sauce pan.  Cover and bring to a boil.  Reduce heat and simmer for 15 minutes or until rice is tender.  Serves 6
 
 
Colorful Keilbasa
 
1 can condensed cream of celery soup undiluted
3/4 cup water
1 T margarine
1 pound smoked kielbasa, cut into 1/2" pieces
3/4 cup uncooked long grain rice
1 package(10 0z) frozen peas
1 4 oz can sliced mushrooms, drained
1 cup shredded cheddar cheese
In a skillet, combine soup, water and butter.  Bring to a boil.  Add keilbasa and rice.  Reduce heat; cover and simmer for 15-18 minutes, or until rice is almost tender.  Stir in peas and mushrooms.  Cover and simmer 15 min until rice is tender and peas are heated through.  Sprinkle with cheese, cover and let stand until cheese is melted.
Serves 4-6
 
Cheesy Beef Enchiladas
 
1# ground beef
16 oz. salsa
2 cups shredded cheese
10 flour tortillas
Brown meat. Drain. Stir in 1/2 cup salsa and half the cheese. Spread 1 cup salsa on bottom of 13x9 pan.  Put 1/4 cup meat in each tortilla. Roll up. Seam side down on salsa. Top with remaining salsa and cheese. Bake 350* 20 minutes.
 
 
Pizza Casserole
 
Cook: 16oz. rigoletti
Brown:
3/4 # Italian sausage & 1# ground beef (drain)
Add:
 small tomato paste
        pizza sauce
        cooked rigoletti
        12oz. mozzarella cheese
Place in greased casserole dish. Bake 350* 1 hour.
 
 
 Tuna Casserole
 
1 1/2 cups cooked noodles
1 can cream mushroom soup
1/2 cup milk
1 7oz. can tuna
1 cup cubed cheese
1/3 cup chopped onion
1/2 cup peas (optional)
Mix together.  Put in greased casserole. Bake 425* 15 minutes. My kids top with chow mien noodles for crunch ..my sis-in-laws tops with potato chips for crunch.
 
 

Beef Barbecue Casserole

1 pound hamburger
1/2 bottle barbecue sauce
1 cup grated cheese
16-ounce can pork and beans
1/2 cup onion, chopped
8-ounce can refrigerated biscuits
Salt and pepper, to taste

Preheat oven to 375 degrees. Brown hamburger; drain fat. Add pork and beans, barbecue suace, onions, salt, and pepper. Simmer 5 minutes. Pour into lightly greased casserole dish. Cut
biscuits in halves, place cut side down, forming circle around edge of casserole. Top with grated cheese. Bake 20 minutes

 

Beef Ramen
 
1 1/4 pounds ground beef
2 packages ramen noodles
2 cups oriental frozen vegetables
 
Brown the ground beef until no longer pink; drain
off fat.  Stir in seasoning packet from ramen
noodles.  Add 2 cups water and stir. Bring to a
boil.  Break noodles into pieces.  Stir in broken
noodles and vegetables.  Simmer until heated
through and noodles are cooked.
 
 
 
7 Layer Casserole
 
Place the following ingredients in the order
given in a 9x13" pan .
 
1 cup uncooked rice
1 cup canned whole kernel corn
Sprinkle with salt and pepper to taste.
Pour over the top 1-8 oz can
tomato sauce and 1/2 cup water.
1/2 cup chopped onion
1/2 cup chopped green pepper
3/4 lb. ground beef
 
Pour over the top 1-8 oz can
tomato sauce and 1/4 cup water.
Cover meat with 4 strips of bacon cut in half.
Bake covered for 1 hour at 350
Uncover and bake 30 minutes longer until
the bacon is crisp.
 
 
 
Beef & Macaroni
 
2 lbs. ground round
1 onion
1 green bell pepper
4 small cans or 2 lrg can shoepeg corn
2 large cans Hunts whole tomatoes, chopped up
1 can Campbells Tomato soup
dash of cumin
salt & pepper
onion powder and garlic powder
1 small box elbow macaroni
 
Brown the ground round with the chopped onions and chopped bell pepper,
when meat is browned and cooked, add seasonings as desired, add canned
tomatoes, chopped, and then add corn, soup, and macaroni. When macaroni
is done, eat and enjoy. Very easy but so delicious and hearty!
 
 
 
Lasagna Rolls
 
1/2 c ricotta cheese
1/2 c shredded mozzarella cheese
2 T grated Parmesan cheese
1/2 t garlic powder
1 t dried basil
1/2 t dried oregano
1 egg
8 lasagna noodles
14 oz jar pasta sauce
 
Cook the lasagna according to the package directions, drain,
and rinse in cold water to cool. Stir together the ricotta, mozzarella,
and Parmesan cheeses, garlic powder, basil, oregano, and egg.
Spread about 2 T of this mixture on each noodle, then roll up the
noodle.  Arrange the rolls, seam side down, in a lightly oiled
baking dish.  Pour the pasta sauce over all, cover, and bake at
350 for 20 to 25 minutes.
 
 
Raviolli Casserole
 
1 jar (28 oz) spaghetti sauce
1 package (25oz) frozen cheese raviolli cooked and drained
2 cups small curd cottage cheese
4 cups shredded mozzarella cheese
1/4 cup grated parmesan cheese
Spread half the sauce in ungreased 13 x 9 baking dish. 
Layer half the raviolli, 1 1/4 cups of sauce, 1 cup cottage cheese,
and 2 cups mozzarella.  Repeat layers.  Sprinkle Parmesan.
Bake uncovered 350* for 20-40 minutes.
Let stand 5-10 minutes before serving.
6-8 servings


Meatball Stroganoff
      

1 pound ground beef made into meatballs, any recipe you prefer

1/4 cup butter or margarine
1 cup onion, chopped
3 tablespoons flour
1/8 teaspoon garlic powder
1 tablespoon ketchup
1 can condensed beef bouillon
1/4 cup water
1 1/2 cups sour cream
1/8 teaspoon pepper
Cooked noodles

Make meatballs and cook or bake.  In large saucepan, cook onion in butter or
margarine until onions are tender, but not brown.  Stir in flour.  Add
garlic powder, pepper, ketchup, bouillon and water.  Cook and stir until
mixture bubbles.  Add meatballs and cook over low heat for 10 minutes.  Stir
occasionally while meatballs are heating.  Mix in sour cream.  Heat, but do
not boil.  Serve over cooked noodles.

Chicken Stir Fry

l tbsp. veg oil
l lb. boneless, skinless chicken breasts cut into strips
l can golden cream of mush. soup
3 tbsp. soy sauce (I use light soy)
l tsp. garlic powder
l bag (l6 oz) frozen veg. combination, thawed
4 c. hot white rice

In a large skillet or wok put l tbsp. veg oil and add chicken and
stir fry until chicken is cooked through.  Add soup, soy sauce, and garlic.  Heat to a boil. Add thawed veg. and cook over med. heat until veg. are tender crisp, stirring often. 
Serve Over Rice
 

Easy Cheeseburger Casserole

1-2 pounds ground beef, browned with minced garlic
4 cups cooked rice
1 c. Velveeta cheese
1 family size can cream of chicken soup
1-2 c. shredded cheddar cheese

Combine meat, rice, Velveeta, and soup while hot and stir
until cheese is melted. Spread into baking pan and top with
shredded cheddar cheese. Heat in a 350 oven for 20 minutes.

Serves 6-8.
