Spreads for Breads and Muffins

Sometimes you just want something different to spread on your fresh warm breads or muffins, and butter, margarine, or jam just doesn't cut it............ So I added this page with some different spreads for your crusty breads and fresh muffins.      ENJOY!

*CRANBERRY BUTTER*
1 stick butter
1/2 cup plumped dried cranberries, finely minced
1/2 cup fresh cranberries, finely minced
1/4 cup confectioner's sugar

*Honey Butter*
1/2 lb (2 sticks) butter
1/4 C strong dark honey
2 tsp. lemon juice or to taste

*Texas Road House Cinnamon Butter*
2 Stick Butter Softened
1/3 C. Condensed Milk (chilled)
1/2 tsp. Corn Syrup
3/4 tsp.- 1 tsp. Cinnamon (to taste)
Preparation:
Place all ingredients in a food processor and blend until mixture is smooth. Serve with hot rolls or muffins, remainder may be stored in refrigerator.

*SPICED HONEY BUTTER*
1/2 cup butter or marg. softened
 2 TBS honey
1/4 tsp ground coriander
 1/4 tsp ground nutmeg

*ORANGE BUTTER*

1/2 cup butter or marg. softened
 1/3 cup orange marmalade
1/2 tsp grated orange rind
 1 tsp confectioners sugar

*SUNSHINE BUTTER*

1/2 cup butter or marg softened
 2 TBS honey
1 TBS grated orange rind
 1 TBS finely flaked coconut

*YOUR FAVORITE BERRY BUTTER*

1/2 cup butter or marg. softened
 1 tsp confectioners sugar
1/3 cup strawberry, raspberry or your favorite jam

*Chocolate Butter*
It's butter like you've never tasted! Spread it on nut bread, banana bread or rasin-bread toast.
1/2 cup unsalted butter or regular butter
1 cup sifted powdered sugar
1 ounce unsweetened chocolate, melted and cooled
2 teaspoons vanilla
1 teaspoon chocolate flavoring
1/8 teaspoon salt (optional)
In a medium mixing bowl, beat butter with an  electric mixer for 30 seconds. With mixer on low speed, add powdered sugar, a little at a time, beating until combined.  Add the cooled chocolate, vanilla, chocolate  flavoring and salt,
if you like. Beat until smooth. Cover and chill in refrigerator.
 Serve at room temperature. Makes 1 cup (16 servings).

*Chocolate Butter*

1 stick butter, softened; cut into pieces
1/4 cup semi-sweet chocolate chips, melted

Stir butter and chocolate together by hand. Transfer to covered container, refrigerate or freeze until ready to use. Serve with biscuits, pound cake, croissants, muffins or waffles.

*HONEY PECAN BUTTER*
1 stick butter
1/2 cup churned honey
1/3 cup toasted, chopped pecans

*ORANGE CRANBERRY BUTTER*
1 stick butter
zest of one orange, finely minced
1/2 cup plumped dried cranberries, finely minced
1/2 cup fresh cranberries, finely minced
1/4 cup confectioner's sugar

*CINNAMON BUTTER*
1 stick butter
2 tablespoons cream cheese
1/4 cup confectioner's sugar
1-2 teaspoons cinnamon

Savory butters

*ROASTED GARLIC AND CILANTRO BUTTER*
1 stick butter
2 tablespoons olive oil
2 tablespoons minced cilantro
1/4 very finely minced roasted garlic
1/3 cup minced roasted red pepper

*HORSERADISH AND DIJON BUTTER*
1 stick butter
2 tablespoons Dijon mustard
2 teaspoons white horseradish

LEMON & HERB BUTTER*
1 stick butter
1 tablespoon lemon zest, finely minced
1/4 cup fresh parsley, finely minced
1 teaspoon each, basil and oregano

*GARLIC & DILL BUTTER*
1 stick butter
1/2 cup cream cheese
1 garlic clove, finely minced
1 tablespoon fresh parsley, finely minced
2 tablespoons fresh dill, finely minced

CHEDDAR BUTTER SPREAD*
1/2 C. butter, softened
1 C. shredded Cheddar cheese
1/2 tsp. Worcestershire sauce
1/4 tsp. garlic salt

Combine all ingredients. Serve with warm bread.

*STRAWBERRY BUTTER*

3/4 C. frozen strawberries,
thawed and drained
1 C. butter, softened
3 T. confectioners' sugar

Mix ingredients in blender until smooth. Refrigerate. Makes about 2
cups.
