 HUSH PUPPIES

2 quarts vegetable oil for frying
3 cups cornmeal
2 tsp baking powder
1 1/2 tsp salt
1 1/2 cups milk
1/2 cup water
1 egg, beaten
1 small onion, minced

In a deep fryer, heat vegetable oil to 365 degrees F (185 degrees C).

In a large mixing bowl, combine all other ingredients and blend well.  Shape the batter into small balls, approximately 1 tablespoon each.  Use a long handled spoon to gently slide them into the oil.  Cook the hushpuppies, 8 or 10 at a time, until brown.  Remove from the oil with a slotted spoon and roll on paper towels to briefly drain.  Serve hot.
Makes 2 dozen.

Corn Fritters
 
1 cup flour
2 TB sugar
1 tsp. baking powder
1 tsp salt
2 eggs
1/4 cup milk
2 TB oil
1 can corn
 
oil for frying..powder sugar for rolling them in.
 
Mix flour, sugar, b.powder and salt with whisk. Beat eggs with milk and oil.. gradually add to flour. Add corn. Fry at 365* for 2-3 minutes turning once til golden. Roll in powder sugar, serve warm.
 
Canadali
 
1/2 cup milk
1/4 cup water
2 eggs
2 cups flour
1/2 # bacon, diced
1/2 # hard salami, diced
Mix together.  Drop by tablespoonfuls into boiling chicken broth base.
 
 
Corn Pops
 
11oz. hulless corn pops
1 stick butter
1 stick oleo
2 cups brown sugar
1/2 cup white corn syrup
1/2 tsp. baking soda
Mix sugar, corn syrup, butters. Heat till bubbly. Add baking soda and mix well. Pour over corn pops on Teflon cookie sheet. Bake 200* for 50-60 minutes.
 
 
Pickled Eggs
 
2 cups white vinegar
1/4 cup sugar
1 TB pickling spices
2 bay leaves
1 tsp. salt
1 sliced onion
Boil 10 minutes. Add a dozen boiled eggs. Let stand 12 hours
 
 
Pizza Crust
 
1 cup flat beer
2 TB butter
2 TB sugar
1 tsp. salt
2 1/2 cups flour
2 1/4 tsp. (1pkg) yeast
Dissolve yeast in warm beer.  Add butter, sugar, salt and flour. Mix till dough forms ball. Turn onto floured surface, knead 2 minutes. Place in greased bowl. Cover. Let rise in warm place till double. Punch down. Sprinkle pan with cornmeal. Bake 400* for 25 minutes.
 
 
Batters For Deep-Frying

1 cup Bisquick
1/2 cup beer

1 tsp. baking powder
1/2 tsp. salt

1 cup milk
1/4 cup oil
 
 
Homemade Pasta
 
9 eggs
1/2 cup hot water
1/8 cup oil
Mix.
Add 2 cups flour. Beat.
Roll out on floured surface.
Cut to desired size.
Add to boiling water.  Cook until tender
 
 
Hard Frosting
1 cup Crisco
2# powder sugar
1/2 cup milk
tsp. vanilla (almond optional)
beat well. cover store in fridge.
 
Soft Frosting
3 cups Crisco
1/2 cup butter
2# powder sugar
1/3 cup canned milk
1/2 cup water
beat till creamy. Store in fridge covered.
 
Chocolate Frosting
2-3 sticks butter
2# powder sugar
tsp. vanilla
1/2 cup cocoa
very hot water til desired consistency.
 
Cream Cheese Frosting
3 oz. cream cheese
2 cups powder sugar
1 tsp. vanilla
1/2 cup butter
1 tsp. milk
beat well. store covered in fridge.
 
Vanilla Frosting
3 cups powder sugar
1/3 cup butter
1 1/2 tsp. vanilla
2 TB milk
beat well store in fridge covered.
options:
peanut butter: substitute peanut butter for butter. milk 1/4 - 1/3 cup
orange: omit vanilla, substitute orange juice for milk
Maple Nut: substitute 1/3 cup corn syrup for vanilla and milk
Cherry: 2 TB cherries. 2 drops red food color
Lemon: omit vanilla and substitute lemon juice for milk
 
 
Pretzels
1 1/2 cup warm water
1 1/8 tsp. active yeast (1 1/2 pkg)
2 Tbs. brown sugar
1 1/8 tsp. salt
1 cup bread flour
3 cups regular flour
2 cups warm water
2 Tbs. baking soda
To taste coarse salt
2-4 Tbs. butter (melted)


Sprinkle yeast on lukewarm water in mixing bowl; stir to dissolve. Add sugar, salt, and stir to dissolve; add flour and knead dough until smooth and elastic. Let rise at least 1/2 hour.
While dough is rising, prepare a baking soda water bath with 2 cups warm water and 2 Tbs. baking soda. Be certain to stir often.
After dough has risen, pinch off bits of dough and roll into a long rope(about 1/2 inch or less thick) and shape. Dip pretzel into soda solution and place on greased baking sheet. Allow pretzel to rise again.  Bake in a 450 degree oven for about 10 minutes or until golden. Brush with melted butter and enjoy!
Toppings: After you brush with butter try sprinkling with coarse salt. For cinnamon sugar, try melting a stick of butter in a shallow bowl (big enough to fit the entire pretzel) and in another bowl, make a mixture of cinnamon and sugar. Dip the pretzel into the butter, coating both sides generously.  then dip again into the cinnamon mixture.
